After a fun day out with the fam, we wanted to make a quick and easy dinner that will feed even the picky kids! I am a fan of one pan meals, as they are quick and almost mess free. This one inspired us to head outdoors to enjoy!


Ingredients:
1 Lbs of Shrimp (peeled and deveined to save time!)
4 corn cobs
1/2 bag of creamer potatoes (you can also use the red ones)
3 hot dog or chorizo links
1 teaspoon of Olive Oil
Parsley
Juice of 1/2 a lemon
Salt & Pepper to taste
Optional: Cayenne Pepper and Garlic if not feeding little ones
Directions:
– Pre-heat oven at 400F
– You can quarter the potatoes or use them whole. Since I needed this to be ready quick, I steamed the potatoes until soft.
– In a bowl mix the shrimp, 1/2 of the lemon juice & Mix.
– Add the potatoes, sausage/hot dog, olive oil, salt, pepper (Cayenne and Garlic/Garlic Salt if using) rest of the lemon juice and mix.
– Place in a baking sheet pan, add the corn (I cut each corn in three) and bake for about 15 minutes. Note: All ingredients are already cooked when they go in the oven except the shrimp, so cook for about 10-15 minutes or until shrimp is fully cooked.
– Transfer to a serving plate, garnish with fresh parsley, and sprinkle with paprika. Enjoy!
